ROASTED KIDNEY

If you like kidneys, this is a nice recipe to make when there are just one or two people eating.

2 tablespoons vegetable oil

1 beef kidney with a layer of its fat intact

1 or 2 large potatoes, peeled and cut into large chunks

Salt and fresh-ground pepper

1. Grease a small baking dish and place the kidney in it. Place potatoes around it. Season with salt and pepper and place in a preheated 350° oven for about 45 minutes or until done to taste. Baste the kidney and potatoes several times with the fat that renders off the kidney Makes 1 or 2 servings.
